Classic Italian Cheese Ravioli with Sausage Alla Vodka

This comforting and flavorful dish combines tender Nuovo Pasta Classic Italian Cheese Ravioli with a rich and creamy vodka sauce, perfectly balanced with savory Italian sausage and a touch of heat from red chili flakes. The sauce, made with heavy cream, crushed tomatoes, and Parmesan cheese, creates a luxurious coating for the ravioli, while fresh basil adds a bright, aromatic finish. Quick to prepare in just 25 minutes, this recipe is ideal for a weeknight dinner or a special Italian-inspired meal.

Ingredients

  • 1 pack (18 oz.) Nuovo Pasta CLASSIC Italian Cheese Ravioli
  • 2 Tbsp Olive oil
  • 2 Small shallots, chopped fine
  • 3 Italian sausages (pork, chicken, OR vegan sausages), casings removed, roughly cut
  • ¼ Cup Vodka 
  • ¾ Cup Heavy cream
  • 2 Cups Italian crushed tomatoes
  • Pinch Red chili flakes
  • 4 Tbsp Parmesan cheese, grated
  • Salt to taste
  • 2 Tbsp Fresh basil, chopped fine 

Directions

  1. Place butter, cut sausages and chopped shallots in a small saucepan and cook over medium-low heat until shallots are golden and sausages are fully cooked.
  2. Add vodka and cook to evaporate alcohol. Add cream, crushed tomatoes, and chili flakes. Bring to a simmer, add Parmesan and basil, and cook for a few more minutes over low heat. Season with salt to taste.
  3. While sauce is simmering, cook ravioli separately in salted boiling water according to package directions.
  4. Place half of the sauce on a serving platter, then drain and place the ravioli on sauce in platter. Spoon the rest of the sauce on top and enjoy!
