Classic Potato Gnocchi with Portabella and Truffle Sauce

Ingredients

  • 1 Pack (9 oz.) Nuovo Pasta Classic Potato Gnocchi
  • 1 Jar Nuovo Roasted Portabella & Truffle Pesto
  • 1/2 Cup Heavy cream 
  • Salt and cracked black pepper to taste
  • 1 Sprig fresh Italian parsley, chopped
  • 2 Tbsp Parmigiano Reggiano, grated

Directions

1. Cook gnocchi in salted boiling water according to package directions.
2. While gnocchi are cooking, place cream in a large sauté pan over medium-low heat. Bring to a simmer and cook for two minutes. Season with salt and pepper.
3. Add Nuovo Roasted Portabella & Truffle Pesto and stir over very low heat until smooth.
4. Drain gnocchi and add to the sauce in the pan. Toss gently. Transfer to a serving platter or individual plates and sprinkle with parsley and Parmigiano. Enjoy!
