Country Loaf Sandwich with Roast Beef, Brie, and Portabella Pesto

Turn your holiday leftovers into something truly special! Our Country Loaf Sandwich with Roast Beef, Brie, and Nuovo Pasta Portabella and Truffle Pesto brings warmth and gourmet flavor to every bite. Creamy brie, savory roast beef, and our rich, earthy truffle pesto make this a quick, cozy meal that’s perfect for enjoying the season’s best flavors all over again.

Ingredients

  • 2 tablespoons Nuovo Pasta Portabella & Truffle Pesto
  • 2 thick slices of country loaf bread
  • 2–3 slices of roast beef 
  • 2–3 slices of brie cheese
  • 2 tablespoons Portabella and Mushroom Pesto
  • ½ cup arugula or fresh greens
  • 1 tablespoon butter, softened
  • Salt and pepper, to taste

Directions

  1. Spread the butter on one side of each bread slice.
  2. On the unbuttered side of one bread slice, spread a generous layer of the Portabella and Truffle Pesto.
  3. Add the roast beef slices over the pesto, followed by the brie slices. Top with arugula for a fresh bite. Season lightly with salt and pepper if desired.
  4. Heat a skillet over medium heat. Place the sandwich, buttered-side down, in the skillet. Cook for 2–3 minutes until golden, then flip and cook the other side until the brie is melted and the bread is toasty.
  5. Slice in half and enjoy warm!
