Goat Cheese & Roasted Tomato Ravioli with Sweet Pepper Sauce

Ingredients

  • 1 Pack (9 oz) Goat Cheese and Roasted Tomato Ravioli
  • 4 Tbsp Extra virgin olive oil
  • 1 Small shallot, chopped
  • 1 Sweet red pepper
  • 1 Sweet yellow pepper
  • 1 Tbsp Capers, drained
  • Salt and pepper to taste
  • 1 Tbsp Fresh basil, chopped
  • 2 Tbsp Parmigiano Reggiano, grated

Directions

  1. Clean peppers by removing stem and seeds and cut into 1″ diamond shapes.
  2. Cook ravioli separately in salted boiling water according to package directions. While ravioli are cooking, place oil in a small saucepan over medium heat, add shallots, and cook until golden. Add peppers and cook until tender but still brightly colored, then add capers.
  3. Season with salt and pepper to taste. Transfer half of the sauce onto a serving platter. Drain ravioli and place on sauce. Spoon the rest of the sauce on top and sprinkle with basil and Parmigiano as a finishing touch. Enjoy!
