Grilled Chicken Ciabatta with Basil Pesto

Juicy grilled chicken, melty mozzarella, and toasted ciabatta come together with Nuovo’s Classic Genovese Pesto for a bold, basil-packed bite. This easy, satisfying sandwich is made to impress—no fuss, just fresh flavor and a warm, delicious finish every time.

Ingredients

  • 2 Tbsp vegetable oil for greasing the grill
  • 2 6-oz. Chicken breasts, boneless, skinless, and fully trimmed
  • Salt and pepper to taste
  • 2 Italian-style ciabatta rolls (about the size of the chicken breasts)
  • 8 Tbsp Nuovo Classic Genovese Pesto
  • 4 Thin slices of fresh mozzarella
  • Salt and pepper to taste

Directions

  1. Use a paper towel or a brush to evenly grease the surface of a stove-top grill, then set heat to medium.
  2. Cut ciabatta rolls in half and lightly grill the cut sides on the pre-heated grill.  Once the bread is lightly toasted, set aside.
  3. Season chicken breasts with salt and pepper and place on the same grill for approximately 5 minutes per side (to an internal temperature of 165 °F), applying crisscross grill marks if desired.  Set aside. (If you do not have a grill, you can achieve similar results for bread and chicken by using a large nonstick pan on medium heat.) 
  4. Spread 2 Tbsps. of basil pesto on each grilled side of ciabatta rolls
  5. Place grilled chicken on the bottom half, top with two thin slices of mozzarella, and close the sandwich.
  6. Slice each ciabatta sandwich in half and enjoy warm!
