Ingredients
9oz package Italian beef ravioli
salt and pepper to taste
Pinch of red pepper flakes
3 garlic cloves minced
3 tablespoons extra-virgin olive oil
1 pint cherry tomatoes
fresh basil leaves, roughly chopped (a handful)
Parmesan cheese, for serving
Directions
- Cook the ravioli according to package directions. In the meantime let’s make this simple sauce.
- In a skillet, heat 3 tablespoons of olive oil over medium heat, add the garlic, stirring frequently, until the garlic is fragrant (don’t burn it) about a minute.
- Add tomatoes and cook, stirring, until tomatoes begin to burst. You can help them along by pressing on them with the back of a spoon. This will help them release their juices and create a nice sauce.
- Continue to cook for 5 minutes longer. Stir in basil and season to taste with salt and pepper.
- Toss your sauce with the ravioli and shave Parmesan cheese and fresh basil all over the top.
