Ingredients
1 Pack (9 oz.) Nuovo Pasta Long Cut Linguine
1 Medium Yukon gold potato, washed, peeled and diced into 1” cubes
5 oz. Fresh green beans, washed, trimmed and sliced into 2” segments
1⁄2 Cup Nuovo Classic Basil Pesto Genovese
2 Tbsp Pinoli nuts, toasted (optional)
Directions
- Set a large pot with one gallon of water to boil. Once the water is boiling, add a pinch of salt and the diced potatoes and cook for 5 minutes.
- Add the green beans and cook for 5 more minutes. Add linguine and cook for an additional 2 minutes.
- While linguine are cooking, reserve 1⁄4 cup of pasta water for later use. Drain pasta and vegetables and place them in a serving bowl.
- Spoon basil pesto on top and mix gently, adding the reserved pasta water 1 Tbsp at a time— just enough to obtain a creamy consistency. Top with toasted pinoli nuts if desired. Enjoy!
