Organic Kale and White Bean Ravioli with Kale Pesto

  1. Carefully wash a bunch of fresh kale, pick off the leaves, and discard the stems by
    folding each kale leaf in half and holding the leaves down, leaving the stem exposed
    on the edge. Use a knife to slice off the stem where it meets the leaves.
  2. Place kale leaves, walnuts, garlic, oil, Parmigiano, and lemon juice in a blender and
    blend until homogeneous. Add salt and pepper to taste. Set aside.
  3. Cook ravioli in salted boiling water according to package directions. Liberally drizzle
    a serving platter or individual plates with kale pesto.
  4. Drain ravioli and place on top of the pesto.
  5. Drizzle the ravioli with a few more drops of the remaining kale pesto.
  6. Enjoy!
