Pumpkin and sage Ravioli with Green and Red Peppers.

Ingredients

  • 1 Pack (9 oz.) Nuovo Pasta Pumpkin and Sage Ravioli
  • 4 Tbsp Olive oil
  • 1 Shallot, chopped
  • 1 Sweet green pepper
  • 1 Sweet red pepper
  • 1 Tbsp Italian parsley, chopped
  • 2 Tbsp Parmigiano Reggiano, grated

Directions

  1. Chop the shallot and clean the red and green peppers by removing stem and seeds. Cut peppers into 1 inch diamond shapes or other fun shapes if you prefer.
  1. Cook ravioli separately in salted boiling water according to package directions. While ravioli are cooking, place oil in a large sauté pan over medium heat, add shallots and cook until golden. Add peppers and cook until tender but still brightly colored. Season with salt and pepper to taste.
  1. Place half of the sauce on a serving platter. Drain ravioli and place on top of sauce. Cover with the remaining sauce and sprinkle with parsley and Parmigiano as a finishing touch. Enjoy!
