Roast Beef Crostini with Gorgonzola & Sweet Basil Pesto

Ingredients

  • 1 Rustic baguette sliced at a bias to yield eight ½” thick slices
  • 2 Tbsp Extra virgin olive oil (for bread)
  • 8 Slices Roast beef (home-roasted, or deli style)
  • 1 bunch fresh arugula leaves
  • One 7 oz Container Nuovo Gorgonzola and Sweet Basil Pesto

Directions

  1. Lightly brush the bread slices with olive oil, then toast in the oven until golden.
  2. Evenly spread half of the pesto on bread slices, reserving the other half for a final drizzle.
  3. Top each crostino with one slice roast beef and a couple of arugula leaves.
  4. Evenly drizzle the remaining pesto on each crostino as a finishing touch.
