Sundried Tomato Pesto Guacamole

Nuovo’s Sundried Tomato Pesto is delicious as a pasta sauce or added to tomato or cream sauces for an extra flavor kick. It also makes a great topping for grilled meats, chicken, or seafood.
The following is one of many creations that can be prepared in a pinch to satisfy a hungry horde!

Ingredients

  • 7 oz. Nuovo Sundried Tomato & Mozzarella Pesto
  • 2 or 3 Large Hass avocados, ripe and ready to use.
  • A large bag of BLUE CORN CHIPS or your favorite chips.
  • Lime wedges for garnish

Directions

  1. Wash avocados, cut them in half, and use a spoon to remove the pulp. Discard the pit.
  2. Make sure avocados are ripe and green without discolored spots.
  3. Dice the avocadoes into cubes and gently mix them with the pesto until fully incorporated.
  4. You can keep the “guacamole” chunky or if you prefer it smooth, keep mixing to obtain your favorite texture.
  5. Garnish with lime wedges and serve in a bowl with your favorite chips.
