Tri Color Tortellini Soup

Reinvent your soup game with this Tri-Color Tortellini Soup made with Nuovo Pasta’s Mozzarella and Herb Tri Color Tortellini! Each delicate sheet of spinach pasta, egg pasta, and red pepper pasta gets filled with a delicate blend of soft Italian Cheeses and aromatic herbs, guaranteeing the most hearty, comforting Tortellini Soup to date!

Ingredients

  • 1 Pack (9oz.) Nuovo Pasta Tri Color Tortellini
  • 6 Cups Organic free-range chicken broth or vegetable broth
  • 2 Tbsp Extra virgin olive oil
  • 1 Small Carrot, washed, peeled, and ¼” diced
  • 1 Celery stalk, washed, and ¼” diced
  • ½ Red onion, washed, peeled and ¼” diced
  • 2 Cups baby spinach leaves, sliced
  • 1 Ripe tomato, ½” diced
  • Salt and pepper to taste
  • 2 Tbsp Parmigiano Reggiano, grated

Directions

  1. Chop vegetables and slice spinach.
  2. Heat olive oil in a stockpot over medium heat. Add carrots, celery, and onion and sauté until soft, but do not allow to brown.
  3. Add broth, spinach and tomato and bring to a simmer. Season with salt and pepper to taste.
  4. Cook the tortellini directly in the broth according to package directions.
  5. Serve at once in individual bowls.
  6. Sprinkle each serving with Parmigiano Reggiano.
